WINE MAKING PROCESS
The Origin Auxerrois Macération 2022 begins with whole-bunch Auxerrois grapes undergoing maceration on their skins for 10 to 20 days, a technique typically used for red wines. This process extracts color, tannins, and complex aromatics. Fermentation is initiated by indigenous yeasts, a hallmark of natural winemaking. The wine is then aged for 9 to 11 months in old wooden casks or used barrels to allow for integration and development. In line with the S.A.I.N.S. charter, no sulfites are added, and the wine is neither fined nor filtered, ensuring a pure expression of the grape and terroir.
