This high-altitude, cool climate terroir is a key factor in the wine's character. The Nieuwoudt family has a long history of farming in the region, with the current generation, led by winemaker David Nieuwoudt, focusing on wines that reflect this unique environment. WINE MAKING PROCESS
The Cederberg Bukettraube 2022 is produced using reductive winemaking techniques to preserve aromatics. Grapes are crushed at 8°C, followed by 8 hours of skin contact before light pressing. The juice is settled and then fermented in stainless steel at 14°C for 4-5 days. Fermentation is stopped to achieve a semi-sweet profile. The wine is typically unwooded and intended for consumption relatively soon after bottling.
