ABOUT THIS WINE
Celeste Crianza represents a milestone for the historic Familia Torres, marking their first winemaking venture outside of their native Catalonia. Located in the heart of the Ribera del Duero at an extreme altitude of nearly 900 meters, the Pago del Cielo winery crafts wines that are deeply connected to their unique environment. The name Celeste, meaning celestial, and the star-chart label pay homage to the breathtakingly clear night skies over the high-altitude vineyards during the cool September harvest. This high-elevation terroir, characterized by grey limestone and clay soils, experiences dramatic diurnal temperature shifts, which allow the grapes to ripen slowly and retain remarkable freshness.

WINE MAKING PROCESS
The winemaking process for Celeste Crianza begins with a meticulous hand-harvest of Tinto Fino (Tempranillo) grapes. Fermentation takes place in temperature-controlled stainless steel tanks, followed by a maceration period of 15 to 20 days to extract optimal color and structural tannins. Malolactic fermentation is partially carried out in new oak barrels, with two months of aging on the fine lees to enhance mouthfeel and volume. The wine is then aged for 12 months in a combination of French (60%) and American (40%) oak barrels, of which approximately 12% to 29% are new. Finally, the wine undergoes a minimum of 12 months of bottle aging before release to ensure complete integration and harmony.
