WINE MAKING PROCESS
The CeniPrimo Ricasoli 2020 wine underwent fermentation in stainless steel truncated conical vats, with daily punching down for 14-16 days to extract color and tannins. Following fermentation, the wine was aged for 22 months in 500-liter tonneaux, comprising 30% new and 70% second-passage barrels. The grapes were hand-harvested on September 27, 2020. The winemaking process aims to express the unique terroir of the CeniPrimo vineyard and the varietal character of Sangiovese.
