WINE MAKING PROCESS
The Cento Su Cento Primitivo undergoes manual harvesting in mid-September. Fermentation is carried out with controlled temperatures, followed by approximately 20 days of maceration on the skins. Malolactic fermentation is also performed. The wine is then aged for 8 months in French Allier oak barrels, with a further 8 months of bottle aging before release.
