ABOUT THIS WINE
Castle Rock Winery, founded in 1994 by Greg Popovich, operates on an innovative 'virtual winery' model. By owning no physical vineyards or heavy-mortgaged estates, the winery directs its capital strictly toward securing high-grade grapes from prestigious appellations and employing top-tier winemaking talent. Under the direction of Director of Winemaking Meghan Rech, Castle Rock has built a reputation for producing award-winning, high-quality wines that offer exceptional value. The grapes for this Chardonnay are sourced from premier cooler maritime vineyards across California's Central Coast AVA, where the climate allows for slow ripening and excellent flavor development.

WINE MAKING PROCESS
The winemaking process for this Central Coast Chardonnay focuses on preserving primary fruit aromatics while introducing subtle complexity. Grapes are harvested at optimal sugar-acid balance and undergo cool-temperature fermentation in stainless steel tanks. A portion of the wine undergoes traditional barrel fermentation and aging in a combination of stainless steel and oak barrels. This balanced approach allows the wine to develop delicate oak undertones and vanilla characteristics without overpowering the vibrant, crisp orchard fruit profile.
