ABOUT THIS WINE
Mirco Mariotti Centro Yellow is a natural, refermented-in-bottle (Pet Nat) white wine from Emilia-Romagna, Italy. Produced by Azienda Agricola Mirco Mariotti, the estate's vineyards are situated in the Bosco Eliceo area, a mere 300 meters from the Adriatic Sea. The vines, some exceeding a century in age, are non-grafted and grow in sandy soil, drawing water from a deep aquifer. This unique terroir contributes to the wine's distinctive character. Mirco Mariotti inherited the family winery in 2009, following in the footsteps of his father, Giorgio, who was instrumental in promoting the Bosco Eliceo DOC. Mirco and his sister Barbara now manage the estate, focusing on traditional winemaking methods, particularly the ancestral method for sparkling wines. The wines are named after local card games, a nod to the region's relaxed, beachside culture.

WINE MAKING PROCESS
Mirco Mariotti Centro Yellow is produced using organic viticulture practices. The grapes are hand-harvested. Following primary fermentation, the wine is typically aged in concrete tanks. It then undergoes a secondary fermentation directly in the bottle, a technique known as the ancestral method or Pet Nat, which creates its effervescence. The wine is not filtered before release, retaining its natural character and sediment.
