ABOUT THIS WINE
Ceps Nous Celler Pasanau is a red wine from the Priorat DOCa region of Catalonia, Spain, produced by Celler Pasanau. The wine, named 'young vines,' is made from grapes grown on younger plantations within the estate, which are located in La Morera de Montsant and Poboleda. These vineyards are characterized by clay and Llicorella (slate) soils and are situated at high altitudes, some reaching up to 740 meters above sea level. The 2021 vintage experienced a varied weather pattern, with a challenging start followed by favorable conditions for the late October harvest. Celler Pasanau is a family-owned winery with a long history in Priorat, committed to organic and regenerative agriculture.

WINE MAKING PROCESS
The Ceps Nous Celler Pasanau 2021 begins with hand-harvested grapes. Destemming and crushing are followed by a first fermentation in stainless steel vats for 19 days, involving daily pumping-over. The wine then undergoes fermentation in small wood at controlled temperatures. Following fermentation, it is aged for 7 months in 225-liter French oak barrels. The winery practices organic and regenerative agriculture across its vineyards.
