WINE MAKING PROCESS
The winemaking process at Cerbaiona emphasizes minimal intervention to allow the high-altitude terroir to shine. Grapes are harvested by hand and fermented using indigenous yeasts in temperature-controlled concrete and stainless steel vats. Maceration on the skins is carefully managed to extract fine, structured tannins. The wine is then aged in a combination of neutral oak casks and concrete tanks to preserve the bright primary fruit and mineral character of the galestro soils, avoiding any dominant new oak influence.
