WINE MAKING PROCESS
The Paolo Bea Cerrete 2011 is produced using 100% Sagrantino grapes. The winemaking process begins with spontaneous fermentation utilizing indigenous yeasts, followed by an extended maceration period of 52 days. The wine is then aged for 12 months in steel tanks, followed by 36 months in large Slavonian oak casks (botti). It is released unfiltered and after an additional 12 months of bottle aging. The estate adheres to organic farming practices and aims for minimal intervention, including limited or no sulfur additions.
