WINE MAKING PROCESS
The winemaking process for Cerro Añon Reserva begins with fermentation in stainless steel vats at a controlled temperature of 30°C, followed by an 18-day maceration period. Malolactic fermentation is carried out in both new oak casks (French and American) and concrete tanks. The wine then matures for 20 months in 225-liter oak casks, a blend of 65% American and French Allier oak, with barrel ages ranging from new to seven years. Finally, it undergoes 18 months of bottle aging in the cellar before release.
