WINE MAKING PROCESS
The winemaking process for Cezar Syrah begins with destemming and crushing the grapes. Fermentation occurs in acid-resistant tanks at temperatures between 24-28 °C for approximately 10 days, with the grape marc being macerated 2-3 times daily to extract pigments and polyphenols. A subsequent skin contact period of 1-2 weeks further aids extraction. Malolactic fermentation is applied to all red wines, often occurring naturally. For specific bottlings like the Syrah Reserve, aging takes place in used 225-liter French oak barrels for nine months. Harvest timing is determined through test harvests and analysis of key grape parameters, with a combination of mechanical and manual harvesting methods employed.
