WINE MAKING PROCESS
Domaine Pinson employs a winemaking process that emphasizes the distinctiveness of each vineyard. Grapes are hand-harvested early to maintain freshness. Fermentation is carried out using indigenous yeasts, with a portion of the wine undergoing this process in oak barrels and the remainder in stainless steel. Aging varies by cuvée, with village Chablis primarily in stainless steel, while Premier Cru and Grand Cru wines are aged for 9 to 15 months in a mix of stainless steel and older oak barrels, often with lees stirring. This approach aims to capture the essence of the Kimmeridgian soil and the Chardonnay grape.
