ABOUT THIS WINE
La Chablisienne Chablis 2023 is a dry white wine from the Chablis appellation in Burgundy, France, made exclusively from 100% Chardonnay grapes. The producer, La Chablisienne, is a prominent cooperative winery established in 1923 and is the largest producer in the region. The wine's character is deeply influenced by the region's unique Kimmeridgian soil, characterized by marls and limestone with fossilized oyster shells. This terroir is a defining element of Chablis wines. The year 2023 marks the 100th anniversary of La Chablisienne. The winery emphasizes producing wines 'climat by climat,' reflecting the distinctiveness of each vineyard plot, a practice often associated with smaller, artisan producers. This approach, combined with their extensive vineyard holdings across all four Chablis appellations (Grand Cru, Premier Cru, Chablis, and Petit Chablis), allows them to represent the essence of the region.

WINE MAKING PROCESS
The winemaking process for La Chablisienne Chablis begins with cold settling of the must to clarify the juice before fermentation. Fermentation is primarily carried out in stainless steel tanks, a technique chosen to preserve the wine's freshness and vibrant fruit aromas. Following fermentation, the wines are aged on their fine lees in stainless steel for about six months. This lees aging contributes to a subtle increase in texture and complexity while maintaining the wine's characteristic minerality and clean profile. Harvests are managed according to strict AOC regulations to ensure optimal grape quality and ripeness. The winery's approach is rooted in environmental stewardship and a commitment to expressing the unique Kimmeridgian terroir of Chablis.
