WINE MAKING PROCESS
The winemaking process for this Chambertin Clos de Beze Grand Cru begins with hand-harvested grapes, transported in small crates to preserve their quality. Fermentation is initiated using indigenous yeasts, a practice that allows for a natural expression of the vineyard's character. Some winemaking may involve the use of whole clusters. Following fermentation, the wine is aged for 18 months in 100% new French oak barrels, which are carefully toasted at low temperatures for a prolonged period to achieve a delicate oak integration. Maison Joseph Drouhin's approach is deeply rooted in organic and biodynamic farming, employing techniques such as horse ploughing, cover cropping, and natural composting to foster a sustainable vineyard ecosystem. For certain vintages, vinification in 500L barrels has been a part of their process.
