ABOUT THIS WINE
Domaine de la Noblaie is situated on the high chalk hills of Chinon, led by fourth-generation winemaker Jerome Billard. While Chinon is famous for red wines made from Cabernet Franc, white Chinon is exceptionally rare, representing only about two percent of the appellation's total output. The name Chante le Vent (Sings the Wind) refers to the constant winds blowing across the hillside vineyards, which naturally ventilate the Chenin Blanc grapes and protect them from rot, allowing for slow and clean ripening.

WINE MAKING PROCESS
The grapes are hand-harvested with up to three separate passes to ensure optimal maturity. Vinification involves a gentle pressing of whole bunches, followed by fermentation with indigenous yeasts in stainless steel tanks to preserve the pure fruit profile. The wine is aged on its fine lees for four to eight months in stainless steel vats, completely avoiding oak influence to maintain its vibrant mineral character and crisp acidity.
