WINE MAKING PROCESS
The winemaking process at Domaine Trapet for Chapelle-Chambertin Grand Cru emphasizes traditional methods with a strong focus on biodynamic principles. Grapes are hand-harvested and sorted before undergoing fermentation in open vats with native yeasts. Whole cluster fermentation is often employed, contributing to the wine's structure and aromatic profile. Following fermentation, the wine is aged for around 20 months in French oak barriques, with a variable percentage of new oak. Sulfur is used minimally, with a small dose added only at bottling.
