WINE MAKING PROCESS
Champagne Chapuy Grand Cru Blanc de Blancs Brut Reserve undergoes primary fermentation in stainless steel tanks. Following this, the wine undergoes secondary fermentation and maturation on its lees ('sur lattes') for a period of 2 to 3 years, contributing to its complexity and fine effervescence. The dosage, or the addition of liqueur d'expédition, is based on Chardonnay wines to maintain the cuvée's purity. Post-disgorgement, the wine typically rests for 3 to 6 months before release. The estate practices eco-responsible and sustainable viticulture, holding High Environmental Value (HVE) certification, which includes avoiding herbicides, utilizing cover crops, and promoting biodiversity within their vineyards.
