ABOUT THIS WINE
Weingut Riedingerhof is a historic estate located in Merano, South Tyrol, managed by winemaker Hansi Verdorfer. In the 1980s, the estate was entirely converted to apple orchards. Driven by a passion for the historic stone walls of the estate's cellars, Hansi Verdorfer made a bold decision upon inheriting the farm: he would only take it over if he could replant the steep terraces with grapevines. In 2007, he grubbed up the apple trees, transitioned the property to organic farming, and began producing highly characterful, low-intervention wines. The name 'DanFora' is a portmanteau of 'Dante' (referring to the historic Dantestraße vineyard site situated at 400 meters elevation) and 'Anfora' (the Italian word for the clay amphorae used in the cellar).

WINE MAKING PROCESS
The winemaking process for DanFora is defined by minimal intervention and a focus on structural skin tannins. Following a strict manual harvest of certified organic Chardonnay grapes, the whole bunches undergo spontaneous fermentation with indigenous yeasts. The grapes are fermented on their skins for six continuous months inside specialized Demetra ceramic amphorae without any pressing. After this initial skin-contact phase, the wine is left to age in the same ceramic vessels for an additional 13 months, resulting in a total of 19 months of amphora aging. The wine is bottled completely unfined and unfiltered, preserving its natural texture and complexity.
