WINE MAKING PROCESS
The Simonsig Chardonnay 2023 is crafted from 100% Chardonnay grapes. The wine underwent fermentation in French oak, with 35% new French oak used for aging over 9 months. During this period, it was also aged on its lees, contributing to its complexity. Notably, malolactic fermentation was intentionally omitted for this vintage. The wine has an alcohol by volume (ABV) of 12.5%.
