WINE MAKING PROCESS
The production of Charles Heidsieck Blanc de Blancs Brut involves a primary fermentation, typically in stainless steel tanks or oak barrels, to create a still wine. This is followed by the secondary fermentation in the bottle, a process known as the traditional method or 'méthode champenoise,' which creates the effervescence. The wine then undergoes an extended aging period on its lees for a minimum of 12 months, contributing to its complex character. Following aging, the lees are removed through riddling and disgorgement, and a dosage of wine and sugar is added to determine the final sweetness level.
