WINE MAKING PROCESS
Harvesting is performed 100% manually in small crates over 3 to 5 selective passes through the vineyard to pick individual berries affected by noble rot (Botrytis cinerea). After gentle pneumatic pressing and overnight cold settling, initial fermentation occurs in temperature-controlled vats before transfer into French oak barrels. The wine is aged for 12 to 18 months in French oak barrels, with roughly one-third new oak.
