WINE MAKING PROCESS
The winemaking process for Château Bouscassé 2019 begins with manual harvesting. Grapes undergo cold pre-fermentation maceration before a slow fermentation at 28°C, with maceration lasting between 30 to 45 days. Malolactic fermentation is carried out in oak barrels. The wine is then aged for an extended period, typically 36 months in wood, utilizing a combination of 80 H oval casks and small oak barrels, with some new oak influence. A subsequent aging phase in 80 hl foudres allows for further integration and maturation before bottling.
