WINE MAKING PROCESS
Château Cibon Cuvée Marius 2019 is produced using grapes from vines over 60 years old, farmed using organic methods. The harvest is manual and conducted in the early morning. The grapes are directly pressed. Fermentation is carried out using native yeasts in new 2600L French foudres with temperature control, allowing for a long and slow process. Following fermentation, the wine is aged for 24 months in these same foudres. It then undergoes a minimum of one year of bottle aging before its release.
