WINE MAKING PROCESS
Château De Fesles Bonnezeaux Chenin Blanc is produced from 100% Chenin Blanc grapes. The vineyard is situated on south-west facing hillsides with schist, sandstone, and clay soils. The proximity to the Layon river facilitates the development of noble rot. Grapes are harvested by hand in multiple passes to select the ripest and botrytis-affected berries. The wine is vinified and then aged for 15 months in French oak barrels. Chaptalization is permitted under the Bonnezeaux AOC regulations.
