WINE MAKING PROCESS
Château de Fesles Cabernet Franc is produced from 100% destemmed grapes. Fermentation occurs in stainless steel tanks, with a maceration period lasting between 8 to 15 days, utilizing frequent pump-overs. Following fermentation, the wine is aged on fine lees in stainless steel tanks for four months. It then undergoes an additional six months of bottle aging prior to commercialization. The estate is in the process of converting to organic farming practices.
