WINE MAKING PROCESS
Château de Plaisance Ronceray is produced from 100% Chenin Blanc grapes grown on vines averaging 35 years old in the Quarts-de-Chaume terroir. The viticulture is managed organically since 1995 and biodynamically since 2008, with Demeter certification. Grapes are pressed slowly and at cold temperatures. Fermentation occurs using native yeasts. The wine is aged for 12 months in a combination of barrels, foudres, and amphorae, with a portion undergoing partial malolactic fermentation. The estate's winemaking approach emphasizes environmental consciousness and minimal intervention.
