WINE MAKING PROCESS
The winemaking process for this Juliénas involves fermentation at temperatures between 20-30°C for 8 to 12 days, followed by malolactic fermentation. Aging is split, with 20% of the wine maturing in oak barrels for 6-8 months and the remaining 80% in stainless steel vats. The grapes are harvested manually in whole bunches at optimal ripeness. The vineyard is characterized by its location at 320 meters altitude and its soil composition of siliceous volcanic rocks and granite.
