WINE MAKING PROCESS
Château Mons La Graveyre 2020 is produced using a philosophy of minimal intervention. The grapes undergo fermentation in vats, barrels, or jars, with maceration lasting up to four weeks. Winemaking is tailored to each lot, employing gentle techniques. Following fermentation, the wine is aged for 15 to 18 months in a mix of used oak barrels and clay amphoras. The estate practices organic farming, certified AB since March 2020, and is in conversion to biodynamic viticulture. Vineyard management includes agroforestry and crop diversification, with minimal mechanization due to the steep terrain. Grapes are hand-picked and meticulously sorted.
