WINE MAKING PROCESS
The production of Château Mont-Redon Châteauneuf-du-Pape 2021 begins with the complete de-stemming of the grapes. Red varieties are co-fermented, a technique that allows for the harmonious integration of different grape characteristics. Extraction is achieved through punch-downs over fifteen to twenty days of skin contact. Following fermentation, malolactic fermentation is completed in vats. The wine is then aged for approximately 12 months, with about half maturing in stainless steel vats and the other half in oak barrels. A small percentage of the wine sees new oak, with most of the oak being older, to refine tannins and integrate the blend. Bottling typically occurs about 18 months after harvest, with the wine resting in bottle for at least four to six months before release. The estate utilizes optical sorting machines for grape selection and adheres to HVE3 environmental certification.
