WINE MAKING PROCESS
Château Pontet-Canet employs a meticulous winemaking process rooted in biodynamic principles. Grapes are hand-harvested and manually sorted before entering the gravity-flow vat room. Fermentation occurs with indigenous yeasts in a mix of concrete and wooden conical vats, followed by a four-week maceration. The wine then undergoes 16 to 18 months of aging, utilizing a combination of new oak barrels, concrete amphorae, and older oak barrels to preserve fruit purity and develop complexity.
