WINE MAKING PROCESS
The production of Château Soucherie Chaume Premier Cru 2015 begins with a manual harvest, where grapes are carefully selected in multiple passes to ensure optimal ripeness and the presence of noble rot. Fermentation is spontaneous, utilizing natural yeasts and occurring in barrels. Following fermentation, the wine undergoes an aging process of 9 to 18 months in large oak barrels and demi-muids, with some new oak potentially used. The estate also practices organic farming.
