WINE MAKING PROCESS
The winemaking process for this Châteauneuf-du-Pape begins with hand-harvested grapes that undergo selective sorting. A traditional long maceration on skins, lasting 21-24 days at high temperatures, is employed to extract color, fruit, and tannins. Fermentation occurs across a variety of vessels, including concrete tanks, clay, oak casks, stainless steel, amphoras, concrete eggs, and enameled cement vats. Following fermentation, the wine is aged for 14 to 18 months, with 70% matured in vats and 30% in Burgundian pieces and casks.
