WINE MAKING PROCESS
The winemaking process for Chénas Le Jugement Dernier begins with hand-harvested grapes from old vines, characterized by extremely low yields. Fermentation is spontaneous, relying on natural yeasts. The grapes undergo whole cluster fermentation with a maceration period of approximately two weeks. Following fermentation, the wine is aged in oak barrels for an extended duration, with the 2020 vintage spending 24 months in barrique. These techniques are employed with a philosophy of minimal intervention to showcase the purity of the Gamay grape and the unique characteristics of the Chénas terroir.
