ABOUT THIS WINE
Established in 1692, Babylonstoren is one of the oldest working Cape Dutch farms in South Africa's Western Cape. Located on the slopes of the Simonsberg Mountain, the estate takes its name from the Tower of Babel, a conical hill on the property. In 2007, Karen Roos meticulously restored the estate, transforming it into a world-renowned destination featuring an extraordinary eight-acre botanical garden. Led by Cellarmaster Charl Coetzee and winemaker Klaas Stoffberg, the winery focuses on reflecting the unique granite soils and maritime-influenced climate of the region, producing wines that capture the pure essence of their historic terroir.

WINE MAKING PROCESS
The winemaking process for this Chenin Blanc combines traditional and modern techniques to maximize freshness and texture. Grapes undergo 12 hours of cold skin contact prior to gentle pressing. Cold fermentation takes place over three weeks in temperature-controlled stainless steel tanks. To build mid-palate complexity, the wine is aged on its fine lees for four months. While 90% of the blend remains unwooded in stainless steel to preserve vibrant primary fruit, the remaining 10% is matured in Nomblot cement eggs and terracotta clay amphorae, facilitating micro-oxygenation and structural depth without adding oak flavors.
