ABOUT THIS WINE
The Holden Manz Chenin Blanc 2021 is a white wine from the Franschhoek Valley in South Africa's Western Cape. Produced by Holden Manz Wine Estate, this 100% Chenin Blanc is distinguished by its use of old bush vines, some dating back to 1982 and registered with the Old Vine Project. The 2021 vintage benefited from a cooler growing season, leading to a later harvest with naturally higher acidity. The estate itself is a boutique winery established in 2010, situated in a region known for its exceptional terroir.

WINE MAKING PROCESS
The Holden Manz Chenin Blanc 2021 begins with hand-selected bunches from old bush vines. The berries are cooled before a 'Champagne' crush cycle. Clarified juice is then fermented using wild yeasts, with 20% of the wine undergoing fermentation and maturation in a combination of new and second-fill French oak barrels. The wine is aged on fine lees, with continuous stirring (bâtonnage), for a period of approximately 6-8 months. The 2021 vintage was characterized by a later harvest due to cooler weather, which helped preserve acidity.
