WINE MAKING PROCESS
Sourced from high-altitude old vines aged 50 to 95 years grown on decomposed granite soils, grapes are harvested manually in small crates and 100% de-stemmed. Vinification takes place entirely in terracotta clay amphorae with wild yeasts. The wine undergoes a gentle seven-month infusion maceration in amphora without added sulfur, followed by hand pressing and four additional months of maturation in the same clay vessels before minimal sulfur addition at bottling.
