ABOUT THIS WINE
Chi Mera is crafted by Flavio Restani of Az. Agr. Koi, located in the Emilia-Romagna region of Italy. Coming from a modest background where his father made small batches of home-fermented wine, Flavio pursued an oenology degree in Bologna. He spent three formative years as the winemaker and cellar master at the renowned natural winery Il Farneto before launching his own project. Koi is dedicated to preserving local traditions and grape varieties, farming biodynamically, and producing artisanal, low-intervention wines that reflect the authentic spirit of the Emilian hills.

WINE MAKING PROCESS
This sparkling wine is produced using the ancestral method (Metodo Ancestrale), locally referred to as 'Sui Lieviti' (on the lees). The grapes undergo spontaneous fermentation with native yeasts in concrete tanks. Before the fermentation is completely finished, the wine is bottled, allowing the remaining natural sugars to ferment in the bottle and create the gentle sparkle (frizzante). The wine is not disgorged or filtered, meaning the sediment remains in the bottle, contributing to its cloudy appearance and yeasty complexity.
