ABOUT THIS WINE
Castello di Gabbiano is a historic Tuscan estate with winegrowing origins dating back to 1124. Located in the heart of the Chianti Classico region, the estate features a grand 15th-century castle. Under the guidance of winemaker Federico Cerelli, who joined in 2011, the estate has embraced a philosophy of 'modern classicism.' This approach respects ancient Tuscan traditions while utilizing modern precision. The 2015 vintage was highly acclaimed, representing a benchmark year for the region due to ideal, stable growing conditions that allowed the grapes to achieve perfect phenolic ripeness.

WINE MAKING PROCESS
The grapes are traditionally hand-harvested from estate vineyards situated at elevations between 250 and 350 meters. Fermentation takes place on the skins in temperature-controlled stainless steel tanks at 28 degrees Celsius. Malolactic fermentation occurs naturally in stainless steel. The wine is then aged for 5 to 7 months in medium to large French oak casks ranging from 15 to 50 hectolitres. This intentional use of large, seasoned oak casks minimizes heavy wood influence, allowing the natural characteristics of the Sangiovese grape to remain prominent.
