WINE MAKING PROCESS
The Riecine Chianti Classico Gran Selezione Vigna Gittori 2020 is produced from hand-harvested Sangiovese grapes, which undergo a rigorous double selection process. Fermentation takes place in open-top concrete tanks using natural yeasts for around 25 days, with a maceration period of similar length. A 'salasso' (saignée) of 10-20% of the juice is removed to enhance concentration. The wine is then aged for a minimum of 30 months, including 24 months in old French tonneaux, followed by at least six months of bottle aging before release.
