WINE MAKING PROCESS
The Chianti Classico Nuovo is crafted from 100% Sangiovese. Grapes are hand-harvested from late September to early October. Fermentation takes place in concrete tanks using indigenous yeasts at temperatures between 28-30°C, with maceration lasting approximately 35 to 55 days, involving pumpovers and manual punchdowns. After malolactic fermentation in a concrete egg, the wine matures for 12 months in a mix of large Slavonian oak casks and French oak tonneaux. It then undergoes at least 8 months of bottle aging before release. The estate adheres to organic and biodynamic farming practices.
