WINE MAKING PROCESS
The winemaking process for Rocca di Castagnoli Chianti Classico Organic begins with spontaneous fermentation in stainless steel tanks for both alcoholic and malolactic stages. Following fermentation, the wine is aged for 3 months in stainless steel, then for 12 months in large oak barrels (botti). The final stage of aging involves 6 months in bottle before the wine is released. The estate employs organic farming practices, having achieved certification by 2017, and focuses on traditional methods to highlight the unique characteristics of the Gaiole in Chianti terroir.
