WINE MAKING PROCESS
The grapes are harvested around mid-September. Alcoholic fermentation and maceration are conducted in temperature-controlled stainless steel vats for about 10 days, utilizing pumpover and délestage methods. After malolactic fermentation, the wine is aged for several months in stainless steel and concrete tanks before bottling. Ruffino's winemaking philosophy prioritizes traditional methods, respecting the fruit and land with minimal new oak influence.
