ABOUT THIS WINE
Ciclón Paraje Pizarro is a red wine from Castilla La Mancha, Spain, crafted by Viñas Serranas. The wine is made from the Rufete grape, a variety that was once prominent but had largely fallen out of favor. The producer, Viñas Serranas, is a collaborative effort by four friends focused on revitalizing old vineyards, some dating back to the early 20th century, and reintroducing forgotten grape varietals to the region. This project aims to contribute to a new era for viticulture in their area, with the wine originating from high-altitude vineyards.

WINE MAKING PROCESS
The Ciclón Paraje Pizarro 2021 is produced using native yeasts for fermentation, with 15% of the grapes included whole in small tanks. Maceration lasts between two to three weeks, and a small percentage of stems (10-15%) are incorporated, contributing spicy aromas. Following fermentation, the wine is aged for 10 months, with part of it maturing in French oak barrels of varying sizes (300, 500 liters) and larger foudres (2500 liters), while the remainder is aged in stainless steel tanks. The oak used is not new.
