ABOUT THIS WINE
Viñas Serranas is an exciting micro-project founded in Cepeda within the Salamanca province in 2017. It was established by four friends with deep roots in the Spanish wine trade: César Ruiz, Bosi Jiménez, Alberto Martín, and Miquel Udina. Their mission is to revive and showcase the unique, often forgotten local grape variety, Rufete, grown on the steep, high-altitude terraces of the Sierra de Francia. The 2022 vintage of Ciclón marks a significant milestone as the very first vintage of this wine to be officially classified under the DOP Sierra de Salamanca appellation. Due to an exceptionally dry and low-yielding growing season in 2022, the winery chose to pool their top-quality red Rufete grapes into this regional bottling rather than producing their usual single-vineyard wines, resulting in a Ciclón of remarkable depth, concentration, and character that punches far above its weight class.

WINE MAKING PROCESS
The grapes for the 2022 Ciclón were sourced from old, goblet-trained vines planted between 1910 and 1930 across seven different villages in the Sierra de Salamanca. The vines grow at elevations of 650 to 700 meters on complex terraced soils of granite, schist, quartzite, and sandstone. To preserve freshness and acidity during the hot and dry 2022 season, the winery executed a very early manual harvest in small 20 kg boxes. In the cellar, the grapes were mostly destemmed (with up to 15% whole bunches) and fermented spontaneously using indigenous yeasts in 2,500-liter tanks, followed by a three-week maceration. The wine was aged for 10 months, with two-thirds of the volume in neutral, used 500-liter French oak barrels and one-third in stainless steel tanks, before being bottled in August 2023.
