WINE MAKING PROCESS
The production of Clairette de Die Organic follows the traditional 'méthode ancestrale' (also known as 'méthode dioise ancestrale'). The process begins with a primary fermentation in stainless steel tanks at controlled low temperatures. This fermentation is halted by chilling when the wine reaches approximately 5% alcohol. The wine is then bottled, where a natural secondary fermentation occurs, creating the characteristic sparkle and a delicate sweetness. This method is distinct from traditional secondary fermentation in tanks or larger vessels, focusing on the bottle for the final effervescence. The grapes used are primarily Muscat Blanc à Petits Grains, with Clairette also permitted in the blend according to AOC regulations.
