WINE MAKING PROCESS
The Clairette de Die - Tradition BIO is produced using the 'Méthode Dioise Ancestrale,' an ancient single-fermentation method. Grapes are partially fermented, then bottled with residual sugar, allowing fermentation to complete in the bottle and create natural carbonation. Indigenous yeasts are used, and no sugar is added for the secondary fermentation (liqueur d'expédition). The wine is aged for at least four months on its lees. This organic wine benefits from sustainable farming practices, including organic certification and HVE 3 status.
