WINE MAKING PROCESS
Rathfinny Classic Cuvée Brut 2019 is produced using the traditional method. Grapes are whole-bunch pressed and fermented in stainless steel tanks at 16°C with commercial yeast. The wine undergoes 100% malolactic fermentation. It is then aged for a minimum of 36 months on lees in the bottle before disgorgement. The estate emphasizes sustainability and grows all its grapes on-site.
