WINE MAKING PROCESS
Hattingley Valley Classic Reserve is produced using the traditional method, mirroring Champagne production. Grapes are hand-harvested and whole bunch pressed. A portion of the base wine is fermented in old white Burgundy barrels, and partial malolactic fermentation is utilized. The blend incorporates reserve wines, typically ranging from 10% to 50%, to ensure consistency and complexity. The wine undergoes extended aging on lees for at least 4 years in the bottle before release.
