WINE MAKING PROCESS
The winemaking process for Claude Val Blanc involves destemming the grapes, followed by separate vinification for each variety. Fermentation takes place at 16°C with selected yeast. Following fermentation, the wine is aged in stainless steel vats. The grapes are sourced from vines aged between 15 and 30 years, located in Limoux, Carcassonne/Puicheric, and Pézenas, on clay and limestone soils. The Mediterranean climate influences vineyard conditions, with mechanical harvesting done at night. Average yields are 65 hl/ha.
